And it's not possible to do everything, of course, though I could split the holiday over two centres and tour around each region.

Whaddya think? Pyrenees, or something else entirely?

The French Pyrenees is an excellent idea for your holiday. All of that Romanesque architecture (St Sernin at Toulouse, St Martin du Canigou, St Michel de Cuxa, etc) should be a nice counterpoint to the English Baroque. And there's very good trout fishing. Bon voyage.
